This Thai crickets are delicately scented with lemongrass.The taste of the cricket can be similar to the gray shrimp. Before being packaged, the bugs are first frozen during 48 hours before being boiled and then dried by baking. They are then seasoned according to a traditional Thai recipe with lemongrass and kaffir leaves.
